If your heart is set on the Pi then the Pi3 is your best option, with Jessie. More importantly, IMHO, if you MUST use Stretch, DO NOT run rpi-update. You’ve been warned.

During "loss of signal" periods, viewers will see a blue screen. Since the station orbits the Earth once every 90 minutes, it experiences a sunrise or a sunset about every 45 minutes. When the station is in darkness, external camera video may appear black, but can sometimes provide spectacular views of lightning or city lights below.
@Eunanibus The sizes may be an issue… even the xsmall is quite big. I’m thinking on some smaller mirrors it’s going to eat a ton of room ;)

You can do all of this without writing a new ‘OS’ … MagicMirror2 is a damn good backbone…I have many things running on mine…

You can show animated background in an array … or just show one. It’s set up to show an array of videos for both night and day [an array for day videos and one for night]…
As a teacher I can tell you several :)
You can talk about technology… microprocessors and how many millions of commands they execute per millisecond, memory, how what used to fill a room you can now put on a simple little SD card.
Science - flow of electricity and how it all works for computers, how small tech is allowing for things such as medicine, communications and even how to make your home ‘smarter’ and use less energy.
Health, entertainment [movies, sports]
For an exercise let them come up with an idea how to use tech to make their lives easier…
I could go on and on but I think you get the jist ;)
